2 lb flank steak
salt and pepper to taste
2 tbl green pepper chopped
2 tbl onion chopped
1 tbl tomato paste
1/2 tsp prepared horseradish
1/4 tsp sugar
1/2 cup water
2 cup stuffing mix herb-seasoned
1/4 cup cold water
2 tsp cornstarch
Instructions:
Instructions: 1. Score one side of meat. Sprinkle with salt and pepper. Combine green pepper, onion, one tablespoon tomato paste, horseradish, sugar, 1/2 cup water and stuffing.

2. Spoon stuffing mixture down the middle of unscored side of flank steak. Fold ends over and overlap long sides; skewer together. Place on metal rack or trivet in slow cooker. Cover and cook on Low for 8-10 hours.

3. Remove meat. Turn control to High. Dissolve cornstarch in 1/4 cup cold water; stir in one tablespoon tomato paste. Add to juices in pot. Cook on High for 15-20 minutes or until slightly thickened. Slice steak across the grain.

4. Pass sauce with the steak.
