Instructions: To infuse herbs in oil, first use an olive oil (but not an extra-virgin olive oil) and puree a full cup of fresh herbs with a small amount of the olive oil. Filter the olive oil and add additional olive oil until you achieve the desired flavor.
To infuse spices, heat the spice and olive oil together slowly-less than 1 minute. Filter the olive oil and add additional olive oil if the flavor is too strong. Oils To infuse roasted garlic, roast a head of garlic seasoned with salt and pepper in 1/4 cup olive oil at 350 degrees for 30 minutes or until soft and caramelized.
