2 tbl olive oil
1/4 tsp garlic, chopped
3 tbl Spanish onions, chopped
3 tbl red bell peppers, chopped
1 cup chopped fresh spinach, packed
Salt and freshly ground black pepper, to taste
2 tbl cottage cheese
2 tbl feta cheese, crumbled
1/2 cup fresh breadcrumbs
12 lrg fresh mushroom caps
Splash white wine
1 tbl clarified butter
Instructions:
Instructions: Preheat oven to 400 F. In a medium-sized skillet, heat the oil and saute the garlic, onions, and bell peppers for 3 to 5 minutes, or until the onions are translucent. Add the spinach and continue to saute. Stir in the salt, black pepper, and both cheeses. Add the bread crumbs and mix well to combine.

Stuff each mushroom cap with the mixture and place the stuffed mushrooms in a baking pan. Splash with the wine and drizzle on the butter.

Top with the walnuts and bake for 8 to 10 minutes. Serve immediately.

Makes 12 mushrooms.
