Ingredients:
Amount Ingredient
2 cup Mashed Potatoes
1 pkt (8 Ounce) Cream Cheese, see
1 sm Onion, Finely Chopped
2 x Eggs, Well Beaten
1 tbl Flour
1/4 tsp Salt
1/4 tsp Black Pepper
Instructions:
Instructions: Combine all ingredients with the exception of the can of onions in electric mixer bowl. Cream until fluffy. Pour into a greased 1 1/2 qt. casserole.

Spread crushed onions on top and bake uncovered at 350 degrees for 30-35 minutes

Note: My low fat and variation: Use non-fat cream cheese and eliminate the eggs. Use some milk to thin to desired consistency. I have used lite sour cream and some non-fat Ranch dressing dip. That is really yummy.
