Instructions: * I usually do this in a small skillet, stove top Marinate chicken in oil, juice and vinegar several hours or overnight. I usually add more juice. Toss all together, folding in mayo.
NOTES : I made this salad using various recipes for my sons rehersal dinner, using double the ingredients. I made about 20 other salads, using double and triple ingredients, along with Carolina barbecue & baked beans. We had 80 some people. We had sort of a western theme and opened the garage up to beverages in tubs and coolers, music and line dancing. The wedding was in July. We had a huge ice-down server like a restaurants salad bar and the dishes nestled down in an ice bed. It was a labor of love that we will always remember... Email this Recipe:
