Instructions: This was a favorite childhood snack for Zaytseva, who remembers eating the cucumbers out of hand in her grandmothers garden. Its like a drink on a hot day, she says.
1 cucumber (see Note) Salt Halve cucumber lengthwise. Use a small, sharp knife to score it in a diagonal pattern resembling a chain-link fence. The cuts should be about 1/4 inch deep and 1/3 to 1/2 inch apart. Sprinkle salt onto cucumber halves. Put the halves together and rub them back and forth quickly for a few seconds. The juices of the cucumber will foam. Eat immediately. Note: Zaytseva says this works with any type of cucumber but if you are using a large English cucumber, you may want to cut it in sections crosswise for ease of handling.
