Instructions: Peel potatoes.
Place the potatoes in a baking dish just large enough to hold them in a single layer. Pour over enough stock to 1/2 cover and brush tops with melted butter. Season. Place in a hot oven 390F/200C for 35 minutes or until nearly all the stock is absorbed and potatoes are tender and golden on top. Dress into a serving dish and sprinkle with chopped parsley. Traditionally, potatoes are shaped with a knife to resemble barrels prior to cooking. Email this Recipe:
