Instructions: Looking for a few fast, tasty things to do with a chicken breast? Check out these flavorful sauces (and the smart way to sauta).

Basic cooking directions: Pound chicken breast halves to even thickness. Coat with seasoned flour. Heat olive oil in large skillet and cook breasts over medium heat until golden, 4 to 5 minutes; turn and cook 2 to 3 minutes, or until cooked through. Remove from pan and make sauce. Add chicken back to pan with sauce and heat through.

Caesar Sauta: 2 garlic cloves in 1/4 cup butter. Remove garlic, add 2 tablespoons lemon juice and cook until slightly reduced. Add 6 chopped anchovies and 1 tablespoon chopped parsley. Serve over romaine lettuce leaves and sprinkle with Parmesan.

Chili Sauce Sauta: Melt 1/4 cup butter and cook 1 1/2 teaspoons chili powder, 1/4 teaspoon ground cumin, and a pinch of cayenne 1 minute over medium heat. Add 1 cup diced tomatoes; cook 2 minutes. Serve with sour cream and chopped scallions.

Orange-Mustard Sauta: Sauta 1/4 cup chopped scallions and 1/8 teaspoon dried sage in 1/4 cup butter. Add 3/4 cup orange juice and boil to reduce by half. Stir in 2 teaspoons Dijon mustard.

Sun-dried Tomato Sauta: 1 small clove garlic, cut in half, in 3 tablespoons butter. Add 1/4 cup white wine and boil to reduce slightly. Stir in dried tomatoes and cook 1 minute. Remove garlic.
