Instructions: Measure the rice water and 1 teaspoon salt into a pan bring to the boil on the boiling plate cover then transfer to the floor of the simmering oven for about 15 minutes until tender and all the liquid is absorbed.
Heat the oil in a generoussized pan add the curry powder onion and garlic and cook on the boiling plate for 2 to 3 minutes. Add the aubergine and red pepper to the pan. soak fbr a further 3 minutes then cover and transfer to the floor of the simmering oven for 10 minutes until tender. Return the pan to the boiling plate and boil off any excess juices. Stir in the cooked rice and soy sauce and season well. Scatter with parsley before serving. This spicy rice mixture goes well with chicken and pork sausages or it can be served on its own or as part of a vegetarian meal. Serves 6 Email this Recipe:
