1/2 cup finely-ground raw whole almonds (1/2 lb)
2/3 cup sugar
2 x eggs
1/2 tsp almond extract
1 tsp vanilla extract
2 tbl dark rum (optional)
1/4 tsp salt
1 tsp grated lemon zest
2 tbl melted butter
Instructions:
Instructions: * Note: Use fruit such as blackberries, blueberries, sliced strawberries, sliced peaches or sliced nectarines.

Stir almonds, sugar, eggs, almond and vanilla extracts, rum, salt, zest and butter together and spread into prepared tart shell. Add fruit and bake at 375 degrees until set in center, 30 minutes.

This recipe yields 2 cups, enough filling for 1 (9-inch) tart shell, 6 servings.
