Instructions: Combine oil, egg white, vinegar and salt. With fork stir in flour until well combined. Stir in water until dough just holds together. Shape into
disk. Wrap and chill at least 30 min. Meanwhile, in pot over high heat combine 3 apples with 6 T sugar, lemon juice, cinnamon, cloves and 1/4 C water. Bring to a boil. Reduce heat to low; simmer until softened, about 30 min. Puree until smooth. Stir in vanilla. Cool to room temp. Preheat oven to 400 deg F. On floured surface roll out dough into 11" circle. Fit into 9" round removable-bottom tart pan, pressing dough into edges. Fold excesss dough under. Prick bottom with fork. Line with foil; fill with dry rice or beans. Bake 10 - 12 min or until lightly browned. Cool; remove foil and rice. Spoon applesauce over crust. Arrange remaining apple slices in concentric circles on top. Sprinkle with remaining sugar. Bake 45 - 50 min or until apples and crust are browned. If desired, in pot over high heat combine preserves with 1 T water. Bring to a boil. remove from heat; strain. Brush with glaze.
