1/4 cup dry red wine
2 tbl butter
1 tsp ground tarragon
1 tbl chopped fresh parsley
1 tsp garlic powder
1/2 tsp salt
1/2 tsp freshly-ground black pepper
Instructions:
Instructions: Preheat oven to 350 degrees.

In a small saucepan, combine all ingredients except chicken over medium heat. Cook, stirring, for 1 to 2 minutes, or until butter melts and ingredients are blended.

Brush chicken with wine mixture and place breast-side up in a roasting pan. Roast for 1 1/2 hours, basting during cooking, or until the juices run clear and no pink remains.

This recipe yields 4 servings.
