1 cup sherry or dry white wine
4 lrg yellow onions thinly sliced
8 x cloves garlic (to 10) minced
1 tbl whole wheat or unbleached white pastry
flour
4 cup vegetable broth
1/2 tsp ground black pepper
salt or low sodium soy sauce to taste
Instructions:
Instructions: 1. In a large, heavy stockpot, heat wine until bubbling. Add the onions, and reduce heat to medium. Cook onions slowly, stirring frequently, for at least 20 minutes, until they become paste like.

2. Add garlic, and continue to cook for 5 to 10 minutes, until garlic begins to look brown.

3. Stir in flour, and cook for 2 minutes. Pour in stock, and bring to a boil. Reduce heat, and simmer for 20 minutes. Season with pepper and salt or soy sauce. Ladle soup into bowls, and float a slice of toasted bread on top of each serving.
