3/4 cup sugar
1/3 cup Sunsweet Lighter Bake
1 x egg
1 x egg white
1/2 tsp vanilla
1/2 cup peeled and diced tart green apples
1/2 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
3/4 cup raisins (optional)
----------------- STREUSEL TOPPING ----------------
1/4 cup sugar
2 tbl all-purpose flour
1/2 tsp cinnamon
Instructions:
Instructions: Preheat oven to 350F. Coat two 3/4-inch muffin pans with vegetable cooking spray or line with paper muffin cups; set aside. In large bowl, combine sugar, Lighter Bake, egg, egg white and vanilla; mix well. Stir in apples. Combine flour, baking soda, cinnamon and salt; stir into apple mixture. Stir in raisins. Spoon into prepared muffin pans. Sprinkle evenly with Streusel Topping. Bake 25 minutes or until springy to the touch. Cool in pans 5 minutes; remove to rack.

Makes 1 dozen muffins.

Streusel Topping: In small bowl, combine sugar, all-purpose flour and cinnamon. Stir in Lighter Bake with fork or fingertips to make a fine crumb mixture.
