12 x ripe fresh apricots, halved, pitted and cut into 1/2 inch pieces
2 tbl granulated sugar
1/8 tsp almond extract
Ice cream, frozen yogurt or cake
1/4 cup thinly sliced natural (with skins) almonds, lightly toasted
Instructions:
Instructions: Combine apricots and sugar in saucepan and bring to boil over medium heat; cook, stirring, 2 minutes. Remove from heat. Spoon into serving bowl. When cooled, stir in almond extract.

Serve over ice cream, frozen yogurt or cake. Garnish with toasted almonds.

Note: To toast nuts, heat in a dry skillet over medium heat until they start to brown. Stir occasionally. Be careful not to scorch them.
