6 x ears sweet corn, husked
3 x egg whites, stiffly whipped
Instructions:
Instructions: Cut corn kernels from cobs, scraping cobs and reserving as much of the liquid as possible. Fold the kernels and liquid into the egg whites and add salt and pepper. Drop by tablespoonfuls onto a hot griddle that has been lightly sprayed with vegetable oil spray. Cook over medium heat for about 2 minutes per side, until golden brown.

Serves 4 to 6.
