Recipe for Fresh Fig and Rocket Salad with Goats Cheese Toasts

Amount	Ingredient
8 x	fresh green or black figs
6 cup	(about 8 ounces) rocket leaves tom into bite sized pieces
1 sm	red onion diced
	dressing:
2 tbl	sherry vinegar
6 tbl	extra virgin olive oil 1 teaspoon ground pepper
1 tsp	honey
8 slc	baguette lightly toasted

Instructions:

Instructions: Preheat broiler.

Quarter 4 figs lengthwise and set aside. Dice remaining figs and combine with rocket and red onion in large bowl.

In a small bowl whisk all dressing ingredients together.

Toss with rocket mixture.

Spread baguette slices with goat cheese and broil until cheese melts about 2 minutes.

Arrange rocket mixture on salad plates. Place a quartered fig in center of each salad and goat cheese toast on either side.
