Ingredients:

227 gm Punnet strawberries, sliced (8oz)
1 x Fresh peach, peeled and chopped
125 gm White grapes, halved (4oz)
8 x Ratafia biscuits, (8 to 10)
2 x 200 g, (7oz) tubs creme fraiche
125 gm , (4-6oz) soft light, (125 to 175) brown sugar
Instructions:
Instructions: Arrange the strawberries, peach and grapes in the base of a souffle dish or 4 individual ramekin dishes.

Place the ratafia biscuits on top.

Spoon over the creme fraiche to completely cover the fruit and chill for at least 1 hour.

Sprinkle over the sugar and smooth the top, place under a preheated high grill for 1-2 minutes until the sugar has caramelised.

Serve decorated with sprigs of fresh mint.
