Instructions: This knobbly tuber is usually peeled then finely chopped for use in countless spicy dishes. In the never ending quest to be different I often grate the finger skin as well on a coarse grate and then extract the juice from it for use in my recipes. Gather up the shreds then squeeze them firnly to release all the fragrant juice the fibrous shreds can then he thrown away.
