Instructions: In a mini food processor, combine the herbs, garlic, and 1/4 cup of the boiling water, and process to a paste.
In a small saucepan, melt the unsalted butter. Add the couscous and salt and stir to coat the couscous with butter. Stir the fresh herb paste and the remaining 1 cup of boiling water into the couscous, cover, and set aside for 10 minutes. Fluff the herb couscous with a fork and serve at once.
