Ingredients:
Amount Ingredient
6 oz lowfat silken tofu
1/4 cup freshly squeezed citrus juice combine orange-lime-tangerine-etc or white wine
1 tbl fresh herbs chopped
2 tbl rice vinegar
extra virgin olive oil to taste *
Instructions:
Instructions: * Original was 2 tablespoons oil, but with the tofu and mild rice vinegar, you only need enough oil to flavor the dressing

Makes about a cup.

Blend all ingredients in blender. Adjust seasoning as necessary. Add water, vegetable stock or wine to thin to your specifications. Let flavors marry for 1 hour. Toss with salad.

NOTES : Use your own favorite herbs. Mix and match with any variety of citrus fruits. Alter oil and vinegar ratio to suit your taste.
