1 x Ripe mango (1 lb), halved,
Pitted peeled & cut in small
Pieces
2 tbl Minced red onion
2 tbl Fresh lime juice
1 tbl Minced crystallized ginger
1/4 tsp Crushed coriander seeds
1/4 tsp Crushed red pepper
Instructions:
Instructions: Gently mix all ingredients, except mint, in a bowl until well blended.

Cover & chill at least 2 hours or up to 4 days. Stir in mint 15 minutes before serving.
