1/2 lb Fresh shelled peas
(or 3 ten-ounce boxes frozen peas)
4 tbl Unsalted butter - (1/2 stick)
1 x Onion finely minced
Instructions:
Instructions: Steam the peas in a vegetable steamer over simmering water for about 6 to 8 minutes until they are tender (less if using frozen peas).

In a medium skillet, melt the butter. Add the onion and apples and saute over medium-high heat until very tender, about 8 minutes.

Combine peas, onion, and apples in a food processor and puree until smooth. Return puree to saucepan and rewarm over very low heat.

This recipe yields 10 servings.
