Instructions: This is really, really good!! I will definitely make it again. It was labor intensive as I used fresh peaches and they had to be washed, peeled and sliced ... but it was absolutely worth it with all the fresh peaches available right now.
*NOTE: 1/2 C brown sugar + 1 tsp. Sweet N Low Brown. **NOTE 1/2 C sugar + 3 packets Sweet N Low ***NOTE 1/3 C Promise Ultra Fat-Free Margarine (I used Fleischmanns instead) ****NOTE Original recipe called for 1/3 C skim milk In a 3 qt saucepan, combine peaches, brown sugar, cornstarch. lemon juice, and cinnamon. Bring to a boil, stirring constantly. Boil and stir one minute. Pour mixture into a 1 1/2 qt casserole that has been sprayed with a nonfat cooking spray. Heat oven to 350 deg F. Combine dry ingredients. Stir in liquid Butter Buds with a fork until dry ingredients are mistened. Drop by scant 1/4 cupfuls over the hot filling. Bake 30 - 35 minutes or until topping is light brown. Serve with Dream Whip on top or non-fat frozen yogurt. Variation: You can substitute apples, cherries, blueberries, or the fruit of your choice in teh place of the peaches. Serves 9 If the peaches are sweet you can easily cut back on the sugar amounts listed. The fresh peaches I used were not extremely sweet and I cut back the sugar a bit but not much.
