Instructions: Preheat the oven to 350 degrees. Lightly spray or oil a 9 inch-square baking dish.
In a large bowl, combine the flour, oats, brown sugar, lemon zest, baking powder, salt, cinnamon and nutmeg. Work in the oil and apple juice concentrate with your fingers or a fork until coarse crumbs form. Firmly press 2 cups of the oat mixture into the bottom of the prepared pan. Arrange the pear slices evenly on top. Mix the walnuts into the remaining oat mixture and sprinkle over the pears. Pat the mixture firmly into an even layer. Bake for 30 to 35 minutes or until the top is golden brown and the pears are tender. Remove from the oven and cool completely on a wire rack before cutting into squares Email this Recipe:
