Amount Ingredient
7 lb Raccoon fat removed,
cut into 8 to 10 pieces
1 cup Flour seasoned with
2 tbl Salt and
1/2 tsp Freshly-ground black pepper
4 tbl Butter
Instructions:
Instructions: Roll meat in seasoned flour, and brown in hot butter in a heavy Dutch oven. Add broth, cover, and simmer for 2 hours, or until tender.

This recipe yields 8 to 10 servings.
