1 kg fresh herring
2 x egg yolks
2 tbl prepared mustard
2 tbl whipping cream
1/2 cup fine dry bread crumbs
margarine or butter
Clean and fillet the herring.
Rinse well drain and sprinkle with salt.
Instructions:
Instructions: Dip the herring into the batter then into the bread crumbs.

Heat a skillet with margarine or butter.

When the foam subsides add the herring and cook over medium heat till golden brown on both sides.

Serve hot or cold.
