2 lb Frog legs skinned and trimmed
1/2 tsp Salt
1/4 tsp Pepper
2 tbl Lemon juice
2 tbl Vegetable oil
1 tbl Chopped parsley
1/2 x Garlic clove crushed
Fritter batter
Oil for frying
Instructions:
Instructions: In a deep bowl, combine frogs legs, salt, pepper, lemon juice, oil, parsley, and garlic. Let stand for 1 hour. Dry legs with paper towels. Dip legs in fritter batter and deep-fry until well browned. Drain. Garnish with fried parsley. Serve hot.

Suggested Wine: A chilled dry white wine: Pouilly-Fuisse; etc.
