Ingredients:

2 cup rice, long grain
1/2 cup bacon, diced
1/2 cup prawns, cooked
3 x eggs
salt, pepper
1 tbl vegetable oil
1 tsp ginger, crushed
1 x red capsicum
1/2 cup peas
8 x spring onions
1 cup bean shoots
Instructions:
Instructions: Cook rice in a large pan of boiling salted water 10-12 minutes. Dont let it get to soft. Drain and rinse well under cold running water. Allow to drain.

Lay out evenly on a tray and allow to dry out in refrigerator overnight. You can also dry it in a low oven 20 minutes stirring regularly.

Beat eggs with a fork and season with salt and pepper.

Heat 1/2 the oil in wok (not too hot) and pour in enough egg mixture to make a small pancake. Cook egg mixture until set and lift from pan. Repeat with remaining egg. Roll crepes up and slice finely.

Heat remaining oil in wok and saute ginger, capsicum, bacon and prawns 2 minutes.

Stir in rice, peas, egg and soy sauce and toss rice over low heat 3 minutes until heated through.
