Ingredients:

1 tbl vegetable oil
2 x Chinese sweet pork sausages quartered lengthwise
and diced (or any leftover meat)
1 x scallion root end and tough
green tops removed, sliced thin rounds
8 lrg napa cabbage leaves or any Asian greens thinly sliced
4 cup cooked long-grain rice refrigerated overnig
1 lrg egg
2 tbl soy sauce
Instructions:
Instructions: Heat the oil in a wok or large nonstick skillet over high heat. Add the sausages, scallion, and cabbage and stir-fry until the sausages render their fat, 3 to 5 minutes.

Add the rice and continue to stir-fry and mix all the ingredients evenly. Add the egg and stir-fry quickly until the rice dries out completely, about 10 minutes.

Add soy sauce and season to taste with white pepper. Stir-fry an additional 5 minutes and serve.

Variation: Rather than add the egg to the rice, you can whisk it and make a thin omelette. Once cooked, julienne the omelette and place some over each serving of fried rice.

This recipe yields 6 to 8 servings.
