Instructions: Scramble the eggs and remove to a saucer to cool. Fry the bacon and remove to the plate with the eggs. Remove all but a tablespoon or so of the bacon fat from the skillet. Over medium high heat, add the rice to the skillet and saute Chop the eggs and the bacon into smallish pieces and add to the frying rice.
Add the chopped scallions shortly before serving. Stir in the soy sauce. Taste and adjust seasonings as required. A simple recipe for fried rice. We make it when we have a cup or two of cooked rice left over. The proportions arent critical. After a few attempts, you will find ratios that suit your palate.
