Ingredients:
Amount Ingredient
1 cup Sifted flour
1 tsp Baking powder
1 tsp Salt
1 x Egg, beaten
1/2 cup Beer
Oil for frying
1 lb Shrimp, peeled and deveined
1 tbl Cornstarch
1 tbl Sugar
1/4 cup Vinegar
1/2 cup Pineapple juice
Instructions:
Instructions: 1) Sift flour, baking powder, and 1/2 ts salt together in a bowl. Beat in egg and beer.

2) Heat oil to 375 degrees in deep skillet or deep fryer. Dip shrimp in batter, coating well. Fry shrimp, a few at a time, until golden brown.

Drain on paper towels and keep warm.

3)In saucepan, combine cornstarch, sugar, 1/2 ts salt, and vinegar. Add pineapple juice, cook over low heat, stirring constantly, until sauce thickens.

4) Arrange shrimp on serving platter. Place pineapple chunks around shrimp.

Pour sauce on top; serve at once.
