Instructions: Place whitebait in a bowl, cover with some ice and icy cold water. Leave to sit 10 minutes. Drain well, spread onto a tea-towel to dry.
Combine flour, paprika, curry powder, salt and pepper on a tray. Add whitebait and toss to coat. Shake excess flour off fish then plunge into hot oil. Cook in batches to keep heat in oil. Remove with a wire basket and drain on kitchen paper. Serve immediately with wedges of lemon. Use a wok to deep fry. Email this Recipe:
