Instructions: Sprinkle 1 Tablespoon sugar over warm water, sprinkle yeast over this and let stand for 10 minutes, until bubbly.
Mix milk, sugar, flour and yeast mixture. Cover loosely and keep in a warm place for 1 day and one night. Store in refrigerator in a loosely covered container. Stir once a day for five days. Now it is feeding time for Herman. Remove starter from refrigerator and add: 1 cup all purpose flour 1 cup milk 1/2 cup sugar Stir once a day for four more days, while storing in the refrigerator. Herman is ready to use on the tenth day. When using this starter, remember to replenish by using the feeding amounts to keep it going.
