2 tbl Milk
1/4 cup Olive oil
1 cup Cubed potatoes
1/2 cup Diced green peppers
1/2 cup Diced onions
1/2 cup Sausage
----------------- ARUGULA SALAD ----------------
4 cup Arugula
4 cup Mixed baby greens
4 x Ears corn - kernels cut off cob
8 x Chopped roma tomatoes
1 x Sliced red onion
1 x Roasted red bell pepper - sliced
1 cup Sliced buffalo mozzarella
2 tbl Balsamic vinegar
1/4 cup Olive oil

Fritata - In a large bowl, combine all ingredients, whisking until well combined. Pour mixture into a 9" baking pan. Place in a 350 degree oven for 45 minutes or until cooked through.

Salad - Mix together all the lettuces, vegetables and cheese. In a separate bowl, whisk together the vinegar, oil and salt and pepper. Pour dressing over the salad and toss to combine. Serve with fritata.
