56 gm caster sugar
2 x eggs
56 gm plain flour
1 lrg tin of fruit

Instructions: Method
1. Whisk together eggs and sugar until light and creamy.

2. Carefully fold in the flour.

3. Pour mixture into greased 8"/203mm flan ring and bake in preheated oven.

4. When flan is cooked turn out allow to cool and arrange fruit in the centre.

5. Make up the quick gelatine as directed on the packet and carefully spoon over the fruit.

6. Allow to cool and serve.

servings: 6
small oven: 200 degrees C approx 10-15 minutes PREHEATED bottom shelf.

fan oven: 190 degrees C approx 10-15 minutes.
