Instructions: Meringues are virtually free of fat and cholesterol so are a great choice for a light dessert. Top the heavenly filling in this meringue with your favorite fresh fruits. Choose a variety of colors for a pretty presentation.
Heat oven to 275 degrees F. Line cookie sheet with parchment or brown paper. In large bowl, beat egg whites and cream of tartar until soft peaks form. Add 2/3 cup sugar 1 tablespoon at a time, beating continuously until stiff peaks form and mixture is glossy, about 14 minutes. Spoon or pipe meringue onto paper-lined cookie sheet in six 4-inch circles, forming a 1-inch rim around sides. Bake at 275 degrees F. for 45 minutes or until light golden brown and dry. Cool completely. In food processor bowl with metal blade or blender container, combine cottage cheese, powdered sugar and vanilla; process until smooth. Spoon into meringue shells; top with fruit.
