Instructions: 1. In 4-quart saucepan, heat 6 cups water to boiling over high heat. Add barley and 1 1/2 teaspoons salt; heat to boiling. Reduce heat to low; cover and simmer 35 to 45 minutes or until barley is tender and liquid is absorbed (barley will have a creamy consistency).
2. Meanwhile, from limes, grate 1 tablespoon peel and squeeze 1/2 cup juice. In large bowl, with wire whisk or fork, mix lime peel, lime juice, olive oil, sugar, pepper, and 1 1/4 teaspoons salt. 3. Rinse barley with running cold water; drain well. Add barley, nectarines, tomatoes, green onions, and chopped mint to lime dressing; with rubber spatula, stir gently to coat. If not serving right away, cover and refrigerate. Start to Finish Time: "1:10" NOTES : The simple lime-juice vinaigrette gives this salad a delectable flavor.
