Instructions: Cut off and discard the upper part of the lemon grass stalks leaving the lower 8lOcm.
Bruise this with a rolling pin or meat mallet then remove the outer layer. Slice the inner stem very thinly. Mix with all the remaining ingredients except basil and mint. Taste and adjust seasoningbefore serving scatter over the shredded basil and mint to be strirred in as people serve themselves. Note. Coconut cream is sold in liquid form and ready to use in small cartons. Do not confuse it with creamed coconut which comes 9 in hard blocks. Goes well with grilled chicken and other white meats.
