Instructions: Cream margarine, sugar and cinnamon together.
Add flour in 3 parts alternately with sour milk in 2 parts beginning and ending with flour. Mix baking soda with water. Add. Stir. Add cherries and raisins. Mix. Turn into 9 X 9 inch (22X22 cm) cake pan that has been sprayed with no-stick cooking spray. Bake in 375 degree Fahrenheit oven for about 30 minutes until an inserted wooden toothpick comes out clean. Cut into 20 pieces. NOTES : Someone had said that they were looking for a lf fruitcake. I made this one the other day and found it to be quite good. If you choose you can add an egg or two and the recipe will be fine (higher fat though). You can also change the types of fruits that you use(I substituted candied peels for part of the candied cherries), but keep the total measurements the same. I also baked it in a bread pan and it took almost an hour. This recipe was good enough for a non-fruitcake eater to try (when I turned my back) even though I had intended to let it age a bit first. So off I went to make a second batch and we had a chance to sample the first. Email this Recipe:
