1 lrg sweet onion diced
1 lrg green bell pepper diced
2 x garlic cloves minced
2 tbl vegetable oil
1 pkt ground beef substitute - (12 oz)
1 lrg zucchini diced
1 can whole kernel corn - (11 oz) undrained
2 can no-salt-added tomato sauce - (15 oz ea)
2 can diced tomato and green chiles - (10 oz ea) undrained
1 can black beans - (15 oz) rinsed, drained
1 can pinto beans - (15 oz) rinsed, drained
1 tsp sugar
Instructions:
Instructions: Saute first 3 ingredients in hot oil in a large stockpot over medium-high heat 5 minutes or until tender. Stir in beef substitute and remaining ingredients. Bring to a boil; reduce heat. Simmer, uncovered, stirring often, 20 minutes.

This recipe yields about 4 quarts.

Comments: Chili may be frozen up to 3 months, if desired.
