Instructions: Rinse beans. Place in cold water in a large kettle and boil. Reduce heat and simmer a few minutes. Remove from burner, add ham hocks and onions. Cover and allow to soak for an hour. Return beans to burner and bring to boil, then reduce heat and simmer for 1 hour, stirring occasionally. Remove the bones from the ham hocks and return the meat to the beans. Add tomato paste, chili peppers, garlic, and brown sugar. Cover and cook until beans are tender, about 30 minutes. If water gets low, add more.
