1 lb Mushrooms, wiped clean, stem tips removed
2 cup White wine vinegar
1/2 cup Diced celery
2 x Garlic cloves, sliced
2 tsp Oregano
Salt and pepper to taste
Instructions:
Instructions: In a saucepan, bring white wine vinegar to a boil. Add mushrooms and simmer 3-4 minutes. Drain, reserving 1 tablespoon vinegar.

In a bowl, add celery, garlic, oregano, salt, pepper and mushrooms. Cover with oil plus the reserved tablespoon vinegar. Marinate overnight.

Serving suggestion: these savory mushrooms can be served as a first course on a bed of crisp lettuce or as hors doeuvres with cocktail toothpicks.

Yield: 6-8 servings
