Instructions: In a saucepan, bring white wine vinegar to a boil. Add mushrooms and simmer 3-4 minutes. Drain, reserving 1 tablespoon vinegar.
In a bowl, add celery, garlic, oregano, salt, pepper and mushrooms. Cover with oil plus the reserved tablespoon vinegar. Marinate overnight.
