Ingredients:
Amount Ingredient
1 tbl olive oil, (1 to 2)
1/2 cup mixed fresh vegetables, chopped
broccoli, cauliflower,
zucchini, summer squash, snow peas or
scallions
16 x carrot rounds
16 x fresh mushroom slices
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp dried thyme
Salt and freshly ground black pepper, to taste
1 cup white wine
2 tsp fresh lime juice, (2 to 4)
2 x acorn squash, halved, seeded, &
steamed
4 tsp brown sugar, (4 to 8)
Instructions:
Instructions: In a large, deep skillet, heat the oil and saute all of the vegetables for 4 to 6 minutes or until tender-crisp. Stir in the herbs, salt, black pepper, wine, and lime juice and simmer for 3 to 4 minutes.

Preheat oven to 350 F. Coat the inside of each squash half with 1 to 2 teaspoons of the brown sugar and fill with the hot vegetable mixture. Top each squash half with 1/4 to 1/2 cup of the cheese and bake for 15 minutes or until heated through. Serve immediately.
