Instructions: In a large, deep skillet, heat the oil and saute all of the vegetables for 4 to 6 minutes or until tender-crisp. Stir in the herbs, salt, black pepper, wine, and lime juice and simmer for 3 to 4 minutes.
Preheat oven to 350 F. Coat the inside of each squash half with 1 to 2 teaspoons of the brown sugar and fill with the hot vegetable mixture. Top each squash half with 1/4 to 1/2 cup of the cheese and bake for 15 minutes or until heated through. Serve immediately. YIELD: 4 SERVINGS Email this Recipe:
