8 oz penne
2 jar marinated artichokes drained and marinade reserved
1 x 16ounce can garbanzo beans drained and rinsed
1 cup imported black olive pitted and halved
1/2 cup chopped fresh parsley
dressing:
3 tbl reserved artichoke marinade (above)
1 tsp sweethot mustard
1 tbl fresh lemon juice
2 tbl alive oil
1 x salt and freshly ground pepper to taste
Cook pasta according to package directions.
Drain and let cool.
Instructions:
Instructions: In a lawge bowl combine artichokes penne beans olives and parsley.

In a small bowl whisk all dressing ingredients together until well combined.

Toss with artichoke mixture.

Taste and adjust seasoning.

Tossed with at dente tube shaped pasta this mix of bean olive and artichoke is a deliciously edible study in texture. Permeated with artichoke flavour from the marinade the spicy sweet dressing brings a lively freshness to this readily made salad.
