Ingredients:

1 med eggplant 3 cups
peeled and diced
1 med zucchini 1 cup, sliced
1/2 tsp salt
1 lb Lean ground beef or ground turkey
1 med onion 1/2 cup, chopped
1/2 cup rice
4 med tomatoes 3 c,peeled & cubed
1 sm green pepper 1/2 cup,diced
1 cup frozen corn
1/2 tsp salt if desired
1/2 tsp basil leaves
1/2 tsp oregano
1/4 tsp pepper
Instructions:
Instructions: Place eggplant and zucchini in colander. Sprinkle with 1/2 tsp. salt. Let stand for 30 minutes. Rinse and drain. Heat oven to 350 F. In medium skillet,
brown ground beef and onion. Drain. In 3 quart casserole, combine all ingreidnets except parmesan cheese. Cover. Bake at 350 F. for 55-65 minutes
or until vegetables and rice are tender. Sprinkle with parmesan cheese before
serving.

NOTES :
Cut meat to half and cut the fat.
