2 x	Sweet peppers (green, red, yellow-whatever available) cut in strips
1/2 cup	Chopped spinach
1 sm	eggplant, chopped
1 sm	purple onion, chopped

Instructions:

Instructions: Cook for about 1 hour. Serve over linguine sprinkled with parm/romano cheese
