3 cup corn cut from cob - (abt 6 ears)
1/2 cup white vinegar (5% acidity)
1/4 cup chopped green pepper
1 cup chopped sweet red pepper
1 cup chopped onion
1 cup chopped tomato
1 cup sugar
1/2 cup chopped zucchini
1/2 cup chopped yellow squash
2 tsp salt
2 tsp mixed pickling spices
1 tsp mustard seeds
1/2 tsp dry mustard
Instructions:
Instructions: Combine all ingredients in a large saucepan. Bring mixture to a boil; reduce heat, and simmer, uncovered, 20 minutes.

Pack hot mixture into hot sterilized jars, leaving 1/4 inch headspace. Remove air bubbles with nonmetal spatula, sliding it down the side of the jar between the food and the jar, pressing back gently to allow bubbles to escape. Wipe jar rims.

Cover at once with metal lids, and screw on bands. Process in boiling-water bath 10 minutes.

This recipe yields 6 half-pints.
