Instructions: Preheat oven to 425 degrees. Coat a large rimmed baking sheet with nonstick cooking spray.
Place potatoes and onion, cut-sides down, on the baking sheet and bake for 40 minutes. Add garlic to the baking sheet and bake for 10 to 15 minutes longer, or until the potatoes and garlic are tender. Remove from oven and allow to cool slightly. Meanwhile, in a small saucepan, combine milk, salt, and pepper and heat over low heat for 3 to 4 minutes; do not boil. Cut potatoes into quarters and peel onion. Place potatoes, onion and garlic in a large bowl and "smash" with a potato masher or a fork. Add the milk mixture and continue to "smash" to mix well. Serve immediately. This recipe yields 4 servings. Comments: Heres another take on "garlic-ious" mashed potatoes. Simply smashing!
