Instructions: Wash peas and place in a saucepan with water, oregano, bay leaves and salt. Bring water to a boil and simmer for 35 - 45 minutes or until peas are tender. Remove bay leaves and discard. Drain peas and transfer peas to a blender or food processor along with red wine vinegar, olive oil, garlic, and olives. Blend until smooth. Place in a bowl and sprinkle with pepper and garnish with cilantro. Chill until ready to serve. Serve with raw vegetables and/or crackers.
